Sauteed zucchini rounds with onion

From Classic Italian Cooking – for six servings

  • 600gms fresh zucchini
  • 45gms butter
  • 1 cup onion, sliced thinly
  • salt

Slice zucchini into very thin rounds; saute the onions in the butter on medium stirring occasionally until the onion becomes a rich golden brown; add the zucchini, salt, turn the heat to high and coat, stir frequently until done. Can be cooked in advance although not ideal.
