Haddock with onions, rice and walnuts

Ingredients – serves 4

  • 1 cup/200gms basmati rice
  • 2 haddock fillets (300gms or so?)
  • 3 peppercorns
  • 1 bay leaf
  • 2 tbsps olive oil
  • 2 onions thinly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 1 bunch fresh coriander chopped
  • 50gms baby spinach (2 cups?)
  • 50gms chopped walnuts
  • salt and pepper

Cook the rice in boiling salted water until tender 15-20mins, drain, rinse with boiling water, set aside.

Poach the haddock in boiling water with peppercorns and bay leaf 8-10mins; remove and flake into bite sized pieces.

Heat the oil in a large pan; add the sliced onions and cook over a low heat for 10-15mins stirring until golden; stir in the cumin, ground coriander, curry powder and cook a few mins more; add the rice and mix; then add the haddock, coriander and spinach and mix again; season well with salt and pepper; sprinkle with walnuts and serve.
