Raw Marinated Sardines

Ingredients – serves 4

  • 500g sardines
  • 2 lemons
  • 1 clove of garlic, crushed
  • 4 tablespoons extra fine olive oil
  • half mild onion finely chopped
  • salt, pepper
  • 4 tbsps finely chopped flat leaf parsley

Scale, remove head, backbone, fins and tail. Wash and dry and marinate in the juice of one and a half lemons; mix with the garlic and leave in the refrigerator for a day; dress with oil, remaining lemon juice, chopped onion, salt and black pepper; serve sprinkled with parsley.
