Pomegranate tabbouleh

Ingredients – for five to six as a side dish

From Persiana

  • 25gms bulgar wheat
  • 1 large bunch flat leaf parsley, leaves picked and chopped
  • 3 plum tomatoes, de-seeded and finely diced
  • 4 spring onions, thinly sliced up to 7cm from the ends(?!) – effectively a substitute for red onions
  • 100gms pomegranate seeds
  • 1/2tsp ground cinnamon
  • 1-2tbsps olive oil
  • juice of 1 lemon
  • sea salt and pepper
  • optional – baby lettuce leaves to act as cups for the salad

Method

Mix chopped ingredients with the bulgar wheat (best to soften up first), then add cinnamon and pomegranate seeds. Drizzle with olive oil enough to just coat the mixture. Add the lemon juice, salt and pepper to taste. Basically just mix everything up.
