Baked pumpkin or squash with parmesan

Serves 4-6 as a side dish. Used Japanese pumpkin but maybe butternut squash is better?

  • 2-4 tablespoons extra virgin olive oil
  • 3 tablespoons parmesan
  • 500g peeled pumpkin or butternut squash in 3cm or so cubes
  • salt and pepper

In a shallow baking dish mix the oil, salt and pepper and the grated parmesan. Add the pumpkin and mix well to cover well all over, then bake in a preheated oven at 190C for about 45 mins or until tender.
