Prosciutto with figs poached in honey

Serves 4

  • 4 figs – enough for four people anyway
  • 6 tablespoons of clear runny honey highly flavored e.g. acasia
  • 12 slices of prosciutto

Bring the honey with some tablespoons of water to the boil in a small saucepan and take off the heat. Stir and put in the figs cut side down and poach for one minute or so over low heat, turning over once. Let cool. Serve with a platter of prosciutto.
