Serves six – try first off with frozen mussels. But, can’t make at the same time as chicken with green sauce as the ingredients are so similar – a sauce made of parsley, olive oil and lemon!
- 1kg mussels
- juice of 1 lemon
- 120 ml olive oil
- salt and pepper
- 3 tablespoons of finely chopped parsley
De beard mussels and put in cold water to get rid of sand; put in large pan with finger of water, put the lid on and bring to the boil; take off the heat as soon as they open in 1-4 mins.
Prepare the sauce by mixing ingredients and then putting a little in the half shell of each mussel.
