Celeriac puree

Ingredients for 6 portions – great simple recipe for celeriac.

Ingredients

  • 1 large celery root, about 450gms
  • 1 lemon
  • salt to taste
  • 2 tbsp butter
  • 1/3 cup cream or milk, or as needed to adjust texture
  • cayenne to taste

Method

Pretty similar to cooking mashed potatoes except: add juice of half a lemon to the salted water before cooking; drain well; use a blender to puree; pass through a sieve; add juice of half a lemon at the end. Can be prepared in advance.
