Watermelon, mint, feta and black olive salad

One of the easiest but nicest looking and best tasting salads I have done! Serves 4.


  • 200g of feta cut into 2cm cubes (1 cm OK!?)
  • 1/2 watermelon
  • large handful of mint leaves roughly torn
  • 24 stoned black olives
  • freshly squeezed lemon juice to taste


Mix everything together so that it looks nice. Add lemon juice to taste. Note no olive oil on this, which is fine but might well be worth trying with olive oil as well.
