Chorizo steamed clams

This is from food wishes with the written recipe here. Ingredients for 4 appetizers, or 2 larger entrée size portions

Ingredients

  1. 1 tbsp olive oil
  2. 1/2 cup finely diced onions
  3. 3 ounces Spanish chorizo, quartered, sliced
  4. 4 cloves garlic, minced
  5. 1 1/2 cups white wine
  6. 3 pounds Little Neck clams
  7. 1/3 cup chopped Italian parsley
  8. 2 tablespoons butter
  9. grilled bread to garnish

Method

Chop and sweat onion; add chorizo to render out fat; add garlic to develop flavor; season with salt and pepper; add wine, clams and cover for seven minutes or so shaking around without taking off the lid; at the end add and melt; finally add parsley.
