Spiced sweet potato mash



Serves six

  1. 2lb/900gms sweet potatoes
  2. salt
  3. six tablespoons of butter
  4. 1/2 teaspoon of ginger
  5. 1 teaspoon of cinnamon
  6. 2 tablespoons of black or golden raisins soaked in water for 15 mins


Peel the potates, cut into pieces; boil in salted water for 15-20mins; drain and mash with a fork; add butter, salt and pepper, ginger and cinnamon and beat well; add the drained raisins

  1. Quite disappointing – rather dry and firm. Not soaking the raisins properly first probably didn’t help and perhaps adding more butter would be a good idea. Did I boil enough? Claudia Roden has another Moroccan sweet potato recipe that looks a lot better.
