Artichoke with honey and preserved lemon

Serves 4-6; good hot or cold; preserved lemons with honey, garlic, tumeric and ginger; used frozen artichoke bottoms.


  1. 3 crushed garlic cloves
  2. 3 tbsps olive oil
  3. 1/4 to 1/2 tsp powdered ginger
  4. pinch of tumeric
  5. juice of 1 lemon
  6. 1.5-2 tbsps honey
  7. peel of 1.4 preserved lemons cut into strips
  8. 450gms frozen artichoke bottoms
  9. salt


Heat the garlic in the oil a few seconds only and take the pan off the heat; add ginger, tumeric, lemon juice, honey and preserved lemon; add the artichoke bottoms, a cup of water and salt; cover and simmer for about 15 mins or until artichokes are tender adding water if necessary; uncover and reduce at the end

  1. Not bad but not great; probably best made with your own preserved lemons and also the quality of the frozen artichokes was not so good – should work much better with higher quality ones.
